IP English muffins
Ingredients
  • 1 cup oats (blended to flour consistency)
  • 2.5 cups flour
  • 1 tsp salt
  • 1 teaspoon cinnamon
  • 2 tbsp melted butter
  • 1 cup warm water
  • ¾ tbsp yeast
  • 1 tablespoon maple syrup
Steps
  1. Mix yeast,  syrup,  water and rest until yeast blooms. Add to remaining ingredients and knead.
  2. Proof 1 hour in oil coated instant pot.  Roll thin,  cut and place on corn meal sprinkled area.  Cover with damp towel and allow to double.  Heat a (preferable cast iron) pan on low.  Cook on both sides until brown and hollow sounding when tapped.
  3. Next time I think I'm going to add some baking soda to try to get more crannies.
