Holly Jo's Sloppy Stuffed Peppers
I added white rice for normal folks and cauliflower rice for me.
Ingredients
  • 4 Bell peppers
  • 2 lbs ground beef
  • 1 Small onion chopped
  • ¾ cup carrots chopped
  • ¾ cup celery chopped
  • 1 tsp garlic minced
  • 8 oz can mild Rotel
  • ⅓ cup Beef Broth
  • ¼ cup reduced sugar ketchup
  • 2 tbsps tomato paste
  • 1 tbsp worcestershire sauce
  • 1 tsp mustard
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
