Vegan Chickpeas, Greens and Tomatoes
Ingredients
  • 3 cups cooked chickpeas 2 15-oz cans, drained
  • 15 oz can diced tomatoes 1.5 cups, 400g
  • 15 oz can coconut milk 1.5 cups, 400g
  • ½ teaspoon salt
  • 8 oz frozen greens or 6 cups fresh chopped
  • ½ teaspoon garlic powder optional
  • ½ teaspoon red pepper flakes optional
  • Optional: brown rice noodles edamame noodles, shirataki noodles, rice, or other side of choice
