Ingredients
- 300g bread flour
- 5g salt
- 8g baking powder
- 180g water
- 18g corn oil
Steps
- Combine all the ingredients and then kneed by hand or using Kitchen Aid until dough is smooth and slightly elastic. It should be a bit on the wet side at this point.
- Wrap dough in cling film and let it rest overnight in fridge if possible, or a few hours at room temp. If overnight, let it come to room temp before proceeding.
- Heat up your fry oil to 350 degrees.
- Roll the dough out into long rectangles (sorta like pasta) until it is about ⅛ to ¼ thick. Cut into strips about 1 inch wide and 5 inches long.
- Place one strip on top of the other and then press down length-wise with a chopstick in the middle. Press hard and hold for a minute so that they stick together.
- Pick up the dough and just before putting it in the oil, stretch it to more like 9".
- Turn it frequently in the oil so that all sides are cooked until light golden.
- It seems to be best about 30 minutes after you make it.
