Stuffed Portobello Mushrooms (Vegetarian)

  • 1 small yellow onion diced (or ½ large)
  • 2 cups baby spinach
  • 2 cloves garlic chopped
  • 1 cup marinara sauce
  • ¼ cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
