“A quick and easy chicken stroganoff with mushrooms, paprika, dill, and sour cream!
“Normally when I think about stroganoff I think about beef but chicken also works really well! Stroganoff is a dish where the meat is in a sauce made with onions, mushrooms, paprika, mustard and sour cream and it’s often served over egg noodles. I like to add garlic, thyme, worcestershire sauce, soy sauce, and dill to the seasoning! This dish is super simple to make, so it’s perfect for busy work nights and you can easily cook the egg noodles in the time that it takes to make the stroganoff, or you can even cook the noodles in the same pot with the sauce!”

Ingredients
  • 1 tablespoon oil (or butter)
  • 1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces
  • 1 onion, diced or sliced
  • 8 ounces mushrooms, quartered or sliced
  • 2 cloves garlic, chopped
  • 2 teaspoons thyme, chopped (or 1 teaspoon dry thyme)
  • 1 tablespoon paprika
  • 1 cup chicken broth (or beef or water)
  • 1 tablespoon dijon mustard
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons dried dill (optional)
  • ½ cup sour cream
  • salt and pepper to taste
