Roasted Veggie and Rice Buddha Bowl

  • 8 oz brussels sprouts trimmed and sliced in half
  • 1 large sweet potato peeled, and diced
  • 2 tbsp avocado oil or olive oil
  • ⅓ cup chopped pecans
  • salt and pepper to taste
  • subheading: For the avocado cilantro sauce:
  • 1 avocado
  • 2 cloves garlic
  • 2 tbsp apple cider vinegar
  • 1 tsp cumin
  • ¼ cup lime juice
  • ½ cup water
  • ¼ cup chopped fresh cilantro
  • ¼ cup pepitas (pumpkin seeds)
  • 1 tsp salt
  • ½ cup avocado oil or olive oil
