Ingredients
  • 4 to 6 chicken thigh fillets (approx. 600 g)
  • 20 g honey
  • 40 g tamari or soy sauce
  • 40 g almond butter
  • 1 fresh long red chilli
  • 1 lime, juice only
  • 1 bunch fresh coriander, leaves and stems
  • 200 g rice
  • 900 g water
  • 1 to 2 bunches broccolini, trimmed (see Tips)
  • 80 to 100 g fresh baby spinach leaves
  • 2 to 3 tsp extra virgin olive oil, to drizzle
