This is an ABSOLUTE favorite of mine since my dad made me one fresh from the garden when I was 6yrs. Made one every night for 3wks after our ridiculously long bumper crop that lasted until late December here in Phoenix this year. I am the only one that can eat raw tomatoes in out household, so I can be a little glutinous. I do dehydrate, can & freeze most for cooking, so I'm not truly stingy with my treasures!

Ingredients
  • 2 slices white sandwich bread
  • Creamy mayonnaise, such as Duke's
  • 2 to 3 thick slices from a perfectly ripe summer tomato
  • Kosher or sea salt and freshly ground black pepper
