  • 1 ¼ cups uncooked long-grain brown rice
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 1 cup sliced celery
  • 1 teaspoon dried thyme
  • ¼ teaspoon ground red pepper
  • 3 bay leaves
  • 2 teaspoons Old Bay seasoning
  • 1 pound jumbo shrimp, peeled and deveined
  • 1 (14.5-ounce) can diced tomatoes with green pepper, celery, and onion, drained
