Thanksgiving Kale salad with tahini maple dressing
Ingredients
  • subheading: Salad:
  • 1 bunch Lacinito kale, chopped medium-fine
  • Quinoa
  • Red onion
  • Pomegranate arils
  • Toasted walnuts
  • Dressing:equal parts
  • Tahini (½ cup)
  • ACV (½ cup)
  • Orange juice (½ cup)
  • To taste-
  • Maple syrup (1 T)
  • Fresh garlic (3 cloves)
  • Dijon mustard (1 T)
Steps
  1. Whisk or shake dressing ingredients together
  2. Massage kale with small portion until a bit tender
  3. Toss with remainder of salad ingredients and additional sauce as needed
Notes
  • Keeps well for a couple of days
