Vegan Stuffed Mushrooms
Ingredients
  • 16 oz crimini mushrooms or button mushrooms. Choose larger mushrooms if possible, about two to three inches in diameter.
  • ½ cup walnuts
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons nutritional yeast
  • 1½ teaspoons dried rosemary (divided)
  • 1½ teaspoons dried oregano (divided)
  • Salt and ground black pepper to taste
  • 1 teaspoon extra virgin olive oil
  • 1 large onion (finely chopped)
  • 4 cloves garlic (minced or crushed)
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup dry white wine (optional)
  • ½ cup panko breadcrumbs
  • Zest of 1 lemon (optional)
  • 2 tablespoons fresh parsley (chopped)
