Ingredients
  • 2 tbsp olive oil or butter, plus 1 knob extra for frying the almonds
  • 1 large onion, peeled and finely sliced
  • 600g boneless shoulder of mutton, goat or lamb (plus bones, if available), cut into roughly 4cm cubes
  • ½ tsp ground black pepper
  • 1 tsp ground ginger
  • ¼ tsp saffron threads, soaked in 2 tbsp warm water
  • 1 cinnamon stick
  • 1 small bunch fresh coriander
  • 200g dates
  • 100g dried apricots
  • 2 tbsp flaked almonds
