Eleni's Psari Plaki (Baked Fish)
Ingredients
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion finely chopped
  • 2 scallions chopped
  • 2 cloves fresh garlic finely minced
  • 2 large carrots sliced in thin rounds (we used a mandoline)
  • 2 stalks celery sliced thin (we used a mandoline)
  • 1 cup crushed tomatoes
  • ½ cup Italian parsley coarsely cut
  • 1 tsp sea salt
  • 1 tsp fresh ground black pepper
  • ¾ cup white wine
  • 1 ½ lbs white fish such as cod, halibut or sole
