Marcella Hazan's Lasagna
Ingredients
  • subheading: For the Bolognese Meat Sauce:
  • 2 tablespoons everyday olive oil
  • 2 tablespoons butter
  • 1 yellow onion diced
  • 2 medium or 4 small carrots diced
  • 3 stalks of celery diced
  • 2 cloves minced garlic
  • 1 pound ground chuck (80 to 85% lean)
  • ½ pound ground pork
  • 1 teaspoon salt, or to taste
  • ½ teaspoon fresh ground pepper, or to taste
  • 2 cups whole milk
  • Pinch of fresh ground nutmeg
  • 2 sprigs of thyme leaves
  • 1 bay leaf
  • ½ cup red wine
  • 1 - 6 ounce can of tomato paste
  • 1 can of chopped Italian tomatoes (26 to 28 ounces depending on the packaging)
  • ⅔ cup freshly grated Parmigiano Reggiano (reserved until assembling the lasagna)
  • subheading: For the Pasta:
  • 2 cups of sifted All Purpose Flour
  • 4 large eggs
  • subheading: For the Besciamella:
  • 3 cups whole milk
  • 6 tablespoons butter
  • 4 ½ tablespoons flour
  • ¼ teaspoon salt
  • Ground black peppercorns to taste
