  • 2 tablespoons extra-virgin olive oil
  • 4 garlic cloves, finely chopped or grated
  • 2 tablespoons chopped fresh tender herbs, such as parsley, oregano, and/or basil
  • ¼ teaspoon crushed red pepper flakes
  • ½ cup grated Parmesan cheese
  • 1½ cups shredded low-moisture whole-milk mozzarella
  • ⅓ cup shredded cheddar cheese

  • ¼ cup extra-virgin olive oil
  • Juice of 1 lemon
  • 2 tablespoons Dijon mustard
  • 1 tablespoon raw honey
  • 1 tablespoon red wine vinegar
