Steak Bruschetta with Spaghetti Squash
Ingredients
  • top sirloin steak - 1 pound (I used two 8-ounce steaks.)
  • tomatoes - 6 cups, cored and diced (I used about 8 medium tomatoes from the garden.)
  • garlic cloves - 4, finely chopped
  • red onion - ½ medium, diced (about ½ cup)
  • fresh basil leaves - ½ cup, cut chiffonade or in thin ribbons
  • extra virgin olive oil - ¼ cup
  • good quality balsamic vinegar - 2 Tbsp
  • sea salt - to taste
  • freshly ground black pepper - to taste
  • spaghetti squash - 1 medium
