Orzo Salad with Chickpeas, Cucumbers, Lemon, Dill, & Feta
“Whole wheat orzo pasta salad with chickpeas, cucumbers, lemon, dill, red onion, and feta cheese. This salad is great served as a side dish or main dish.“ added 4-19-2024
Ingredients

  • 15 ounces chickpeas, drained and rinsed
  • 1 cup chopped cucumber
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh dill
  • ¼ cup diced red onion

  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  •  
  • 1 clove garlic, minced
  • 1 tablespoon finely chopped fresh dill
  • Salt and freshly ground black pepper, to taste
