  • 4 boneless, skinless chicken thighs
  • 2 15-ounce cans coconut milk
  • 1 lime (juiced)
  • 8 ounces rice vermicelli (cooked according to package directions )
  • Optional toppings: lime wedges, sauteed mushrooms, cilantro, cherry tomatoes, black pepper
