Ingredients
  • 1 lb lean ground beef
  • 1 Tbsp Chili Powder
  • ½ tsp black pepper
  • ½ tsp kosher salt, divided
  • ¼ cup shredded cheddar cheese
  • 4 toasted buns
Steps
  1. Combine beef, chili powder, black pepper and ⅛ tsp salt in a medium bowl. Shape into 4 equal balls
  2. Heat a large cast iron skillet over high. When pan is hot enough to release wisps of smoke, at bed balls and press down with a firm spatula to form patties. Place a slightly smaller skillet on the parties. Cook until chatted, about a minute and 30 seconds. Flip patties and put small skillet in top again, cook until charred, about a minute. Remove top pan, sprinkle patties with remaining 3/8 tap salt and top with cheese. Cover and steam patties 30 to 45 seconds.
  3. Top with sour cream, scallions and jalapenos.
