Creamy Tuscan Sausage Pasta

  • 1 lb. ground Italian sausage, mild, sweet, or hot
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ½ cup julienne-cut sun-dried tomatoes packed in oil, drained and chopped
  • 4 cloves garlic, minced
  • ½ cup dry white wine/chicken broth
  • 2 cups heavy whipping cream
  • ½ cup Parmesan cheese, freshly grated
  • 3 oz. fresh baby spinach, about 3 cups tightly packed
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley/basil to garnish, chopped (optional)
