Ingredients
  • 1 pound organic whole wheat pasta, such as rotini pasta
  • 4 to 5 Roma tomatoes, sliced and cubed (or you can use 1 large 29-ounce can of petite diced tomatoes, drained)
  • 16 ounces of cooked lima beans or chickpeas (frozen and thawed, or canned)
  • 1 small cucumber, washed and chopped into small pieces
  • 1 15-ounce can low sodium black olives, drained
  • 3 tbsp freshly minced flat-leaf Italian parsley
  • 1 tbsp dried oregano
  • ½ tbsp dried basil (or a few leaves of fresh basil, minced)
  • Juice of 1 lemon
  • Fresh cracked black pepper, optional
