Southern Chess Bars
Ingredients
  • 1 box yellow cake Mix
  • 3 eggs
  • 8 oz. cream cheese
  • 1 stick melted butter
  • 1 lb. (1 box) Powdered Sugar
Steps
  1. Preheat oven to 300 degrees. Grease bottom of a 9 X 13 oven proof dish. With a hand mixer, mix together cake mix, melted butter and 1 egg. It will form a soft dough. Press into the bottom of the 9 X 13 pan. In a bowl, mix together sugar, 2 eggs and cream cheese until smooth. Pour mixture over the dough. Bake approximately one hour at 300 degrees until the top turns a light golden brown. Cool completely before cutting into squares.
Notes
  • You can also add different ingredients to the cream cheese....such as pumpkin ..for pumpkin chess bars, use spice cake mix....or use choc. Cake mix and add peanut butter to the cream cheese....or choc chips to the cream Cheese  , crushed drained pineapple.  Can add pecans to the bottom also.
  • --Can put 1 c coconut and 1 c pecan pieces on crust before adding the cream cheese topping
  • --If you add key lime juice to the cream cheese part, and a little lime zest to the cake mix, it makes them like key lime bars.
  • --I use 4 eggs. 1 yellow cake mix ,1 egg, and melted oleo (actually, I use butter). That is my crust. I pat that into my pan. Then I mix 1 box of powdered sugar, 3 eggs and cream cheese and pour onto top of cake mixture. . Cook at 350 for35 minutes or until cake tester comes back clean. Do not overcook!
