No Bake Carrot Cake Protein Bars! ✨ .
Ingredients

  • 1 cup rolled oats
  • ½ cup soaked raw cashews
  • 1 medium carrot
  • 6 soaked pitted medjool dates
  • 2 to 3 tbsp vanilla plant protein
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ⅓ cup maple syrup
  • 3 tbsp coconut cream
  • 3 tbsp cashew butter
  • 1️⃣ Place oats, cashews, carrots, dates, protein, cinnamon, salt, and ½ of the maple syrup into a food processor and pulse until well combined.
  • 2️⃣ Press firmly into glass baking dish lined with parchment.
  • 3️⃣ Add coconut cream, cashew butter, and remaining maple syrup to bowl & whisk.
  • 4️⃣ Spread on top of bars and pop in freezer to firm up!
