Ginger Cake Squares with Chantilly Cream

  • 2 large eggs, at room temperature
  • 4 c. all-purpose flour, spooned and leveled
  • 1 tbsp. baking soda
  • 1 tsp. fine sea salt
  • 2 tbsp. ground ginger
  • 1 tbsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. freshly grated nutmeg
  • 1 tsp. ground allspice
  • ½ c. boiling water
  • ½ c. finely chopped candied ginger

  • 1 c. heavy cream
  • 2 tbsp. confectioners’ sugar
  • 1 tsp. pure vanilla extract, or 1 tablespoon cool brewed coffee
