Roasted chicken meat

250g Pancetta/bacon cubes

1 Large onion

Mushrooms, sliced

200g Celery Trimmed and chopped

200g Carrots Peeled and chopped

3 Cloves Garlic Peeled and crushed

75g Plain flour

15g Fresh thyme Leaves only, picked from the stalks

100 ml Single cream Optional

Salt and black pepper
