R O AS T E D BE E T & BERRY smoothie
Ingredients
  • 1 heaping cup mixed red berries (examples strawberries, raspberries, blueberries)
  • 1 small beet, peeled and chopped
  • 1 orange + ½ ripe banana, preferably frozen
  • 1 pitted Medjool date
  • 1 tablespoon raw cacao powder
  • 2 teaspoons coconut butter
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon vanilla extract
  • 1 cup non-dairy milk
Steps
  1. ROAST & FREEZE: Preheat oven to 375 degrees. Places chopped beet on sheet pan and roast
  2. for 5 to 10 minutes. Remove and put them in the freezer for 30 minutes to an hour.
  3. COMBINE: In an upright blender, combine the berries, frozen roasted beet and strawberries,
  4. banana, date, cacao powder, coconut butter, lemon juice, vanilla, and plant milk.
  5. BLEND: the mixture on high until smooth and creamy.
  6. POUR: into a glass and garnish with shaved bits of coconut butter and a dusting of cacao
  7. powder if you want. ENJOY!
