Coconut Satay Chicken with Basmati Rice
Ingredients
  • 200g chicken - 1 medium chicken breast, sliced into thin strips
  • ½ tbsp oil
  • 1 tbsp sweet chilli sauce
  • ½ tbsp soy sauce
  • ½ tbsp lemon juice
  • ½ tsp grated ginger
  • ½ onion, chopped
  • ½ broccoli, cut into florets, slice the stalk thinly and chop
  • 1 carrot cut longwise and sliced into thin half moons
  • 1 ½ Tbsp peanut butter
  • 165ml can or small carton of coconut cream
  • 1 ¼ cups water
  • ¾ cup rice- I use basmati as is lower GI
  • a pinch of salt
  • a pinch of dried chilli flakes
