Green Curry (P-Mala's Recipe)
Ingredients
  • 1 cup chicken cut or similar, sliced thin
  • ¾ tsp palm sugar
  • 4 green thai eggplants
  • ¼ cup pea eggplants
  • 1 red & 1 green long chili
  • 1 tsp lime leaves (3 to 8 leaves)
  • 2 tbsps packed thai basil leaves (8 to 10 leaves)
  • 3 cups coconut milk
  • subheading: Curry Paste:
  • ½ tsp salt
  • ½ tsp black peppercorns
  • 1 tsp galangal, sliced into slivers
  • 2 tsps magroot skin, sliced into slivers (Fresh Kaffir Lime Leaf a close substitute or lime juice)
  • 1½ tbsps lemongrass, bottom of the stalk, sliced into rounds
  • 1½ tbsps shallots, skin removed
  • 2½ tbsps garlic, skin removed
  • 2½ tbsps green small thai chilies, whole
  • ¾ tsp shrimp paste
