  • 1 cup (240g) whipping cream (35% fat) , chilled
  • ¼ cup (35g) chocolate crispy pearls , optional

  • 7 oz (200g) cream cheese
  • ⅔ cup (160g) sparkling white wine
  • ⅓ cup (80g) powdered sugar
  • 2 ½ tsp (8g) gelatin powder
  • 3 tbsp (45g) cold water
  • 1 cup (240g) whipping cream (35% fat) , chilled
  • subheading: White Chocolate Stars:
  • 2.5 oz (70g) white chocolate
  • 1 oz (30g) white chocolate , for tempering
