Instant Pot Black Bean Burrito Bowls {Vegan, Gluten-Free}
Ingredients
  • 1 tsp ( 5 ml) vegetable oil
  • ½ onion, diced
  • 1 red bell pepper, diced
  • 1 ½ tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp salt*
  • 1 cup ( 180 g) uncooked basmati rice**
  • 1 cup ( 130 g) frozen corn
  • 1 cup ( 240 ml) salsa of choice
  • 1 ¼ cup ( 300 ml) water
  • 1 15 oz. can of black beans, drained and rinsed
  • Optional Toppings: fresh cilantro, diced avocado, guacamole, shredded lettuce, shredded cheeze, etc.
