Slow-Cooker Cauliflower & Chickpea Tikka Masala
Ingredients
  • 1 (15-ounce) can no-salt-added chickpeas, rinsed
  • 1 ( 14- ounce) can full-fat coconut milk
  • 1 ( 14- ounce) package frozen  cauliflower florets
  • 1 ( 10- ounce) package frozen chopped  butternut squash
  • 1 cup frozen chopped onions
  • 1 cup frozen peas and carrots
  • 1 ½ cups canned crushed tomatoes
  • ¼ cup tomato paste
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 teaspoons garam masala
  • 1 ½ teaspoons curry powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon plus ⅛ teaspoon salt
  • ¼ teaspoon cayenne pepper or Kashmiri chile powder (optional)
  • 2 cups frozen  brown rice
  • Fresh cilantro leaves for garnish (optional)
