Ingredients
  • 2 tablespoons cooking oil

  • 1 lb. jumbo shrimp, shelled, deveined, tail-on
  • ½ cup coconut milk
  • ¾ tablespoon fish sauce (add more to taste)
  • ½ tablespoon Thai palm sugar (preferred) or sugar (add more to taste)
  • 4 oz. zucchinis, sliced and halved
  • 2 oz. red bell peppers, seeded and cut into strips
  • ½ tablespoon chopped cilantro
