Avocado-turkey Lettuce Wrap
Preparation time: 3 minutes-Total time: 10 minutes
Ingredients
  • 4 ounces ground turkey
  • ½ cup diced sweet potato
  • 1 teaspoon chopped fresh parsley
  • Pinch of sea salt
  • ⅛ teaspoon black pepper
  •  
  • 6 romaine lettuce leaves
  •  
  • ½ cup salsa
  • ½ avocado, diced
  • 1 cup any Phase 3 fruit
Steps
  1. Heat a skillet over medium heat and when hot, cook the turkey, sweet potato, and parsley with the salt and pepper for 5 to 8 minutes or until the turkey is browned and the sweet potato is tender. Put the turkey mixture in the lettuce leaves, top with the avocado and salsa, and fold the lettuce leaves around the filing.
  2. Serve with the fruit on the side.
