Easy Vegetarian Stuffed Peppers
Ingredients
  • 4 Large Bell Peppers sliced in half and seeds removed
  • 2 Tbsp Olive Oil
  • Kosher salt and pepper, to taste
  • 1 Medium Onion diced
  • 2 Garlic Cloves minced
  • ¼ tsp Red Pepper Flakes optional
  • 1 tsp Ground Cumin
  • 1 Tsp Smoked Paprika
  •  
  • ½ Tsp Cayenne Pepper optional
  • 15 oz Diced Tomatoes one can
  • 15 oz Black Beans drained and rinsed, one can
  • 15 oz Red Beans drained and rinsed, one can
  • 3 Cup Vegetable Broth
  • 1 Cup Fresh/Frozen or Canned Corn
  • 1 Cup Quinoa
  • ½ Cup Shredded Monterey Jack Cheese
  • Optional toppings: Avocado, cilantro/parsley, sour cream, and lime wedges
