Instant Pot Beef Stew {Gluten-Free}
Ingredients
  • 2-½ lbs Beef Stew Meat
  • Scant ¼ cup Otto's Cassava Flour
  • ½ tsp Sea Salt
  • ½ tsp Ground Black Pepper
  • 4 Tbsp Fat of Choice (olive oi, avocado oil, ghee, bacon fat, lard, etc), divided
  • 1 large Yellow Onion, diced
  • 3 large Carrots, sliced
  • 4 stalks Celery, diced
  • 2 cloves Garlic, minced
  • Approx 8 Red Potatoes, diced small (no need to peel)
  • 1 Bay Leaf
  • 1-½ tsp Dried Parsley
  • 1 tsp Dried Oregano
  • ⅛ tsp Dry Mustard Powder
  • ⅛ tsp Ground Ginger
  • 2 tsp Apple Cider Vinegar
  • 1-½ cups Beef Broth, or Vegetable Broth in a pinch (we use Pacific brand)
