- Rice for Stuffing
- 2 cloves garlic
- 1 --- brown onion, halved
- 60 g Butter
- 45 g olive oil
- 1000 g water
- 2 tbsp TM stock (veg or chicken)
- 500 g long grain rice
- 1 --- bay leaf, dried
- 2 tsp oregano, dried
- Non-Vegetarian Addition for Stuffing
- 250 g pork mince
- 250 g Veal mince
- 2 tbsp olive oil
- 2 tbsp tomato paste
- Stuffed Zucchini
- 12 --- zucchini, sliced in half longways with the center removed
- 12 --- tomato, ripe, halved
- 2 tsp salt
- 2 tsp balsamic vinegar, optional [may wish to use 1tsp sugar]
- to taste fetta cheese, crumbled
