Loaded Veggie and Potato Breakfast Bake
Throw some veggies, potatoes, eggs, and cheese together in a casserole dish.

Servings: 12, if you’re hungry, 6.

Ingredients
  • 1 bag of Simply Potatoes seasoned to taste
  • 10 rggs, beaten
  • 1 lb mushrooms
  • 1 lb vegetables of choice
  • 1 onion, diced
  • 2 cups shredded cheese
Steps
  1. Sauté onions and mushrooms, if frozen throw veggies in at the last minute and cook until water is gone
  2. Mix ingredients, reserve one cup of cheese, and pour in greased pan. Evenly spread remaining cup of shredded cheese over the top.
  3. Bake for 45 minutes at 375.
