Sausage Egg McMuffin Casserole

Ingredients
  • 8oz. Turkey sausage
  • 5 Light whole grain English muffins
  • ⅓ cup low-fat milk
  • 8 eggs
  • ½ cup fat free cheddar
  • ½ cup 2% cheddar
  • Salt & pepper to taste
Steps
  1. Preheat oven to 325.  Cook and crumble sausage.  Cut up each English muffin into 12 bite size pieces. Layer half the English muffin in a sprayed 11x7 or 8x8 baking dish. Sprinkle half the sausage and the fat free cheese over that. Add the rest of the English muffin, followed by the remaining sausage, and cheese. Whisk eggs with milk and salt and pepper. Pour egg mixture over entire baking dish. Bake at 325 for 40 to 45 minutes.
Notes
  • Serves 6 at 5sp each on blue or purple.
  • I used Simple Truths turkey sausage. I used Thomas’ light whole grain English muffins.
