Lemony Baby Potatoes by Suzy Karadsheh
Ingredients
  • 1 teaspoon dried oregano
  • 1⁄2 teaspoon dried thyme
  • 1⁄2 teaspoon sweet paprika
  • Kosher salt and ground black pepper
  • 2 pounds baby Yukon Gold potatoes, scrubbed and halved
  • 6 large garlic cloves, minced
  • Grated zest and juice of 1 lemon (about 1⁄4 cup juice)
  • Extra-virgin olive oil
  • 11⁄4 cups chicken stock, homemade or low-sodium chicken broth
  • 1⁄2 cup fresh flat-leaf parsley, roughly chopped
