Italian Wedding Soup {Gluten-Free, Dairy-Free}
Ingredients

  • 3 tbsp almond flour (see notes for AIP)
  • 2 tsp chopped parsley
  • ½ tsp oregano
  • 1 garlic clove, finely minced
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • subheading: For the soup:
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • ½ cup chopped celery
  • ¾ cup cassava orzo, dry (or another GF orzo)
  • 6 cups chicken broth
  • Salt & pepper to taste
  • 3 cups fresh spinach, chopped
