Healthy Indian-Spiced Broccoli Fritters with Green Yoghurt
Ingredients
  • 350g broccoli, roughly chopped
  • 1 cup frozen broad beans, thawed, peeled
  • 1 garlic clove, crushed
  • 3 green onions, chopped
  • 2 tbsp chopped fresh mint leaves, plus extra sprigs to serve
  • 1 cup chickpea flour (see note)
  • ½ tsp baking powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 egg, lightly beaten
  • ¼ cup vegetable oil
  • 4 baby cucumbers, thinly sliced
  • Warmed roti, to serve
  • Mixed salad leaves, to serve

  • Green yoghurt
  • ½ cup plain Greek-style yoghurt
  • 1 cup fresh mint leaves
  • 1 tsp lemon juice
