Banana Bread Baked Protein Oats
Ingredients
  • coconut or avocado oil spray
  • 3 medium sized ripe bananas, mashed
  • 3 eggs, beaten
  • 1 tsp vanilla extract
  • ¼ cup maple syrup
  • 2 cups gluten-free oats, blended into a flour (or ~1 ½ cups oat flour)
  • 100 g vanilla protein powder
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup canned coconut milk (about ½ 13.5oz can)
  • ½ cup ¼ cup dairy-free chocolate chips
