Ingredients
  • 1 onion, diced

  • ½ chicken meat from the crock pot chicken, cut into bite-sized pieces
  • 15 ounce can of diced tomatoes or 4 to 5 diced tomatoes
  • 1 zucchini, grated
  • ½ cup fresh basil leaves or 3 TB dried basil
  • 15 ounce can of full fat coconut milk
  • salt and pepper, to taste
