Greens in coconut curry

  • 2 to 3 large handfuls of mixed cooking greens (kale, chard, spinach, nappa cabbage)
  • 2 Tbl canned coconut milk (1 "ice cube")
  • Curry powder to taste
  • Salt to taste
  1. Put greens and coconut milk in a saucepan. Bring to a boil.
  2. Put on lid, turn off heat, and let sit 3 to 5 minutes until greens are wilted.
  3. Stir in a few shakes of curry powder and a pinch of salt.
  4. Serve hot or at room temp.
