Pickled Jalopenos
Ingredients
  • one onion, chopped
  • 5 garlic cloves, chopped
  • oil
  • 8 jalopenos
  • 2 large carrots
  • 1 tsp mexican oregano
  • 1 tsp cumin seeds
  • 1 tsp whole peppercorns
  • 1 ½ cup vinegar
  • 1 cup water
Steps
  1. Chop one onion and 5 garlic cloves and saute in oil under medium high heat until golden brown.
  2. In the meantime, chop about 8 jalopenos and 2 large carrots.
  3. Add 1 tsp of Mexican oregano, 1 tsp cumin seeds, 1 tsp of whole peppercorns.
  4. Add to saute for about 2 minutes.
  5. Add 1 ½ cup of vinegar and 1 cup of water.
  6. Simmer until jalopenos turn army green.
  7. You're done! Refrigerate and enjoy for the week.
