Homemade Bread

Ingredients
  • 3½cupwarmwater
  • · ¼ cup olive oil
  • · ⅓cupplus2tablespoonshoney
  • · 1 ½ tablespoons kosher salt
  • Mix
  • · 4cupswholewheatflour
  • Mix
  • · 1½cupsbreadflour
  • · 2tablespoonsyeastmixedin
  • Mix
  • · Addanother1­2cupsofbreadflourtillit’snotstickingtothesidesanymore(it will still feel a little sticky to the touch though)
  • o Or you could add 3 ½ cup whole wheat flour + ⅓ cup gluten (optional) instead
Steps
  1. Knead in Bosch for 8­10 min
  2. Take it directly out of the bowl and divide into loaf amounts on a greased/oiled counter; round edges in hand until top is smooth, then turn over on counter and fold over corners and turn a quarter...keep doing several times, then form into a loaf by pinching together in the middle and push with fingers to flatten out a little and make it the right size, and put it straight in the greased bread pan. Oil the tops with the oil left over on the counter, and let raise 1 time (about 1 hour or until bread is about 1⁄2 inch above pan) and bake at 350 degrees for 25­30 minutes. (in NH cover after 11 and bake for 22 total)
  3. The original recipe calls for just hard white wheat flour but I have since started using a mixture of white wheat and kamut wheat since kamut wheat has more protein in it. It doesn't taste much different just a little healthier.

  • 4 2⁄3 c warm water 1⁄3 c olive oil
  • 1⁄2 c honey
  • 2 Tbsp kosher salt
  • Mix
  • 5 1⁄3 c ww flour (if using hard red wheat do 1 c wheat and 1 1⁄2 c bread)
  • Mix
  • 2 c bread flour (if using hard red wheat do 1 c bread mixed with yeast) 2 2⁄3 Tbsp yeast
  • Mix
  • 4 2⁄3 c ww flour (if using hard red wheat do 1 1⁄3 c bread flour + 1 c wheat) opt. 1⁄2 c gluten
