Moroccan Tagine of Lamb & Prunes Instant Pot
Ingredients
  • subheading: For the lamb stew:
  • Put your IP on sauté mode for 30 mins
  • Add 4 tbsps of olive oil and fry 500g of diced onions for about 10 mins, stirring regularly (add a little water if the onions start to stick).
  • Add lamb pieces and brown them all over (I use about 1.5kg of deboned leg, cut into large chunks, with all visible fat removed, get your butcher to cut it for you)
  • subheading: Add the following to the pot and mix it well to incorporate:
  • 5 garlic cloves, crushed
  • 3.5 ml of powdered ginger
  • 5 ml of Salt
  • 2 ml of white pepper
  • 2ml of Saffron (a generous pinch)
