Ingredients
- 2 apples (peeled, cored, cut up)
- ½ small onion (cut into pieces)
- 2 sprigs fresh parsley
- 3 tbsp. butter
- salt
- 1½ c. herb-seasoned stuffing cubes
- 2 tbsp. lemon juice
- 1 4-lb. striped bass ( dressed)
- cold water
Steps
- Preheat oven to 350° F.
- Put apples, onion, & parsley in blender container.
- Cover with cold water & blend till chopped; drain.
- Pour apple mixture into saucepan; add 1-tbsp. butter, & ½-tsp. salt.
- Simmer 10-mins.; then toss with stuffing cubes.
- Melt remaining butter; then stir in lemon juice.
- Brush fish cavity with lemon-butter; then salt lightly.
- Spoon stuffing into cavity.
- Place fish in baking dish & brush with lemon-butter.
- Cover (If using aluminum foil, have shiny side facing fish.) & bake 50 to 60 mins.
