  • 250 g vermicelli rice noodles
  • 2 tbsp olive oil
  • 1 tsp garlic, freshly minced
  • 1 tsp ginger, freshly minced
  • 1 cup mushrooms, finely chopped
  • 800 g pork mince/ground pork (can be substituted with chicken or regular beef mince)
  • 1 cup green cabbage, shredded
  • 2 cups bean sprouts
  • ½ cup carrots, grated or julienned
  • 2 spring onions/scallions, finely sliced, some reserved for garnish
  • ½ cup chicken stock
  • 2 tbsp light soy sauce (see note 1)
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce (optional, see note 2)
  • 1 tsp sugar
  • 1 tbsp sesame oil
  • ¼ tsp black pepper
  • 1 tsp sesame seeds
